Chili: 1 Meal, 3 Different Ways

Have you ever been to a chili cook off? I have, and I was amazed at how many different ways you can spice up the same basic ingredients! I’ll share 3 of my favorite chili recipes for you here, plus you can always swap out ground beef for roast beef cubes as long as you slow roast it for a few hours.

Hearty Beef & Veggie Chili

Ingredients:

  • — 2 tbsp. olive oil
  • — 1 onion, chopped
  • — 2 carrots, peeled, thinly sliced
  • — 1 red bell pepper, seeded, chopped
  • — 1 28-oz can diced tomatoes
  • — 3 cups water
  • 1.5 lbs. ground beef
  • — 1/2 cup bulgur (cracked wheat)
  • — 2 15-oz cans black beans, rinsed, drained
  • — 2 15-oz cans kidney beans, rinsed, drained
  • — 2 tablespoons white wine vinegar
  • — 5 garlic cloves, minced
  • — 1 Tbsp. minced garlic root
  • — 2 Tbsp. chili powder
  • — 2 tsp. ground cumin
  • — 2 tsp. teaspoons ground coriander
  • — 1/2 teaspoon ground cinnamon

Crock Pot Directions
Brown the ground beef in a large skillet over medium heat and drain.
Combine
everything in crock pot; cook on low 8-10 hrs. or high 4-6 hrs.

Stovetop Directions
Brown the ground beef in a large skillet over medium heat, drain and set aside.
Heat 2 tablespoons olive oil in heavy large pot over medium-high heat. Add onion, garlic, ginger, carrots, red bell pepper & sauté until onion & carrots are almost tender, about 8 minutes.
Add tomatoes, 3 cups water, beans, bulgur, browned ground beef, white wine vinegar & spices. Bring to boil.
Reduce heat to medium-high & cook, uncovered, until bulgur is tender & mixture thickens, stirring often, about 20 minutes.

Crockpot Chili

Ingredients

  • 2 lbs. ground beef
  • 2 cans kidney beans (or 1 of black beans)
  • 28 oz. can crushed tomatoes
  • 1 lg. onion coarsely chopped
  • 1 green or red pepper chopped
  • 2 cloves crushed garlic
  • 2 Tbsp. chili powder
  • 1/4-1/2 tsp. pepper
  • 1 tsp. cumin
  • 1 tsp. salt

Instructions

Brown beef and drain.  Add all ingredients to crockpot and stir.
Cover and cook on low 10-12 hrs or on high 5-6.

Pumpkin Chili 

  • 2 lbs. ground beef
  • 1/2 large onion diced
  • 1 green bell pepper diced
  • 2 (15 ounce) cans kidney beans, black beans or cannellini beans
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can pumpkin puree
  • 3 tsp. pumpkin pie spice
  • 1 1/2 – 3 tsp. chili powder (depending on the amount of kick you want)
  • 4 Tbsp. white sugar

Brown beef over medium heat, drain.
Stir in onion and bell pepper, cook about 5 minutes.
Stir in beans, crushed tomatoes and pumpkin puree.
Season with pumpkin pie spice, chili powder and sugar.
Simmer 1 hour.

 

Chili also works great for company or for a pot-luck dinner. Try accompanying  it with rice and cornbread and garnish with sliced green onions, sour cream and shredded cheddar cheese.
